Zeppoli



2.5+ Cups flour.

1 Package Yeast.

1 Teaspoon salt.

1 Tablespoon Sugar.

1 Teaspoon Anise seed.

1.5 Cups warm Water.



Mix yeast and a little of the sugar in 1/2 cup warm water.

Mix flour, salt, remaining sugar and Anise seed. Add yeast and water mix and the remaining water. This should be a thick sticky batter, not as thick as bread dough but not as thin as pancake mix. Add flour to obtain proper thickness. Let rise about 2 hours in a warm place. This time is important as it allows the Anise seed flavor to penetrate the batter.

Deep fry in about two inches of hot oil until golden brown. Drop one tablespoon of batter into hot oil at a time. More than one can cook at a time but leave room for them to turn over by themselves when they are done on the first side. Dry on a paper towel. Dip in warm honey (warmed with very low heat on stove) eat warm.
